Xocoatl- South American Hot Chocolate

Gently heat 2 cups milk with 1 vanilla pod, split in half, 2 cinnamon sticks and a couple of pinches of chilli powder.

When milk is warm, add 150g of dark chocolate. Stir until chocolate has melted.

Take off the heat and allow to infuse for 5-10 mins. Strain the mixture to remove the vanilla and cinnamon and gently reheat it, being careful not to let it boil. (If it gets too hot, it thickens and is impossible to drink.)

If you're a sweet tooth, add honey to taste, but it really doesn't need it. You can also go overboard and serve with whipped cream and grated chocolate on top. But that's just if you have to impress someone.
